When Tracy Wilkinson-Claros moved from her homeland of the Lake District in England to Austin, Texas, she brought something with her: a taste for classic English hot puddings. Starting with the classic sticky toffee pudding, which inspired the name of her company, she went on to develop several other flavors, including the English Lemon Pudding, which won “Outstanding Baked Product” at the Fancy Foods Show in 2007.
